  • 1 clove garlic (minced finely)
  • ½ red or green bell pepper (chopped finely)

(Sauce)

  • 15 oz whole berry cranberry sauce
  • Remaining chili sauce
  • 1 tbsp prepared mustard
  • 2 tbsp brown sugar

Spray cooking oil on non-stick foil placed on 2 large baking dishes.  Preheat the oven to 325°F.

Combine all meatball ingredients in 1 bowl and blend well.  Form into 1 inch meatballs and place on the prepared baking dishes.  Bake until done then place meatballs on a large saucepan.

Mix all sauce ingredients and gently pour over the meatballs.  Cover the saucepan and cook for at least 2 hours over low heat.  Serve on a chafing dish with tooth picks.

  • 1 lb lean ground beef

Combine all meatball ingredients and add enough bread crumbs to adjust the firmness of the mixture.  Shape into medium size balls and place on the baking pan.  Bake for 15 minutes and turn the meatballs and place it back to the oven for another 15 minutes.

Use a pan and combine sauce ingredients under low heat.  Add the meatballs to the sauce and let it simmer for at least 15 minutes.  Serve with hot rice or simply with the sauce.  You can even serve it with pasta if you like!

In preparing this dish, there are a lot of fine chopping to be done and it would be a great tip to add all the required ingredients to be chopped in a food processor, and pulse into fine but not too fine bits.  Any added ingredients to ground beef recipes can be done this way to ensure a fine texture with meatballs.

6 ounces no-yolk whole-wheat egg noodles

Direction

Preheat oven to 350 degree F. Apply cooking spray in a 2 quarts baking dish. Boil  water on a large pot.

Separate the white and green parts of scallions. Slice them thinly and reserve separarely.

On a large skillet cook the beef over a medium-high heat. Break up clumps with a wooden spoon until cook. This will take you about 3 to 5 minutes. Transfer the beef to plate lined with paper towels.

In a large pan, add oil and heat over medium low. Add bulgur, garlic and the reserved white scallion parts. Cook and stir constantly until the scallions are soft. Add the tomato sauce, water and beef. Bring the mixture to simmer, cover and cook until the bulgur is tender and the sauce is thickened. This will take you 15 to 20 minutes. Season with 1/8 teaspoon salt and pepper.

On the large pot of water you prepare earlier, cook the noodles until just tender. This will take you about 8 minutes. Drain and rinse thoroughly under  cold water.

Using a food processor, puree the cottage cheese until smooth. Transfer to a bowl and fold in sour cream and the reserved green scallions. Season the remaining 1/8 teaspoon salt and pepper.

On the pan you prepared earlier, spread half the noodles and top half the cottage cheese mixture and half the meat sauce. Repeat the remaining noodles, cottage cheese and sauce. Top with cheddar cheese. Bake the beef and noodles until bubbly. This will take 30 to 40 minutes. Cool for 10 minutes before serving.
